Have you ever tried chayote squash? I believe some people are not familiar with this special edible plant which belongs to gourd family and how to cook it properly. The key is you have to mix it well with some salt to get rid of the slime. Ingredients

  1. 2chayote squash, julienned
  2. 2 Tbspvegetable oil
  3. 4 clovesshallots, thinly sliced
  4. 3 clovesgarlic, thinly sliced
  5. 200 grshrimp, peeled and deveined
  6. 3red chili peppers, diagonally sliced
  7. 3Thai bird eye chili peppers, sliced (optional)
  8. 1medium tomato, wedged
  9. 1 tspsalt or to taste
  10. 1/2 tspmushroom bouillon
  11. 1/4 tspwhite pepper powder or to taste

Cooking Instructions

  1. 1

    In a coriander, add chayote squash and 1 tsp salt. Mix well. Let it rest for about 15-30 minutes. Squeeze slowly and wring the excess water. Rinse under running water. Set aside.

    Heat vegetable oil in a pan over medium high heat. Sauté garlic and shallots until fragrant.

    Add red chili peppers and Thai bird eye chili peppers (if used). Mix well.

  4. 4

    Add shrimp. Cook until it change color.

  5. 5

    Add chayote squash. Season with salt, mushroom bouillon, and white pepper powder. Cook until the chayote squash tender and moist. Adjust the taste.

    Add tomato wedges. Mix well for a while. Remove from the heat.

  7. 7

    Serve hot over steam white rice.
    Yum! 😋
