Yam egg rolls

Cooking Instructions

Heat some oil in a pan add the grated scotch bonnet and dice onions, seasoning, curry,onga,seasoning, thyme and small amount of water cover and allow it to simmer till fried and soft......

Mashed your yam or ground with mortar and pestle add in your fried spicy mix and mix well....

Peel the cooked eggs and break the raw ones....

Roll the yam into a ball inside the middle put one boiled egg and roll again into a ball.....

After rolling into a ball deep it inside the flour then into the egg follow by breadcrumbs back into the eggs again then into the crushed cornflakes... Repeat the same process till done and deep fry till golden....

Serve with any juice...(watermelon, pineapple, tamarind, or Apple mirinda) you can even serve with tea...

Whoa, it's been a while. Been swamped with work and the kids' finals this semester. Gotta jot down some recipes to remember them! (I often cook on a whim, so Cookpad has been very useful for me!) I made some egg rolls last week. It's fairly easy and tasty. You can adjust condiments to your liking. Angela Mertoyono
