#goldenapron 3, week 11 ingredients : nuts, potatoes #sukibhaji #shak can be made in various ways. I change my style of making every time to get a new taste. Here is one of my variations. I mostly prefer this sabzi for #lunch. I like it khattimithi (sweet and sour), but my hubby doesn't like it so, that's why I've added very little amount of sugar and lemon. However, Hou can adjust the quality as per your taste. Tip: do not let the potatoes cool down after cutting. Be prepared to make bhaji right after they are boiled, peeled and cut.

Ingredients

20 minutes
4 servings
  • 8medium size potatoes boiled
  • 8-10green chillies chopped
  • 2 tbsppeanuts grinded coarsely
  • 1 tbsplemon juice
  • 1 tspsugar
  • To tasteSalt
  • 1/2 tspRed chilli powder
  • 1/2 tsphaldi/Turmeric powder
  • 1 tspMustard seeds
  • 1 tbspsesame seeds
  • 1 pinchasafoetida
  • 10curry leaves
  • 4 tbspoil
  • 2-3 tbspchopped Coriander leaves
  • 1/2 cupcapsicum cut into dices like potatoes
  • 1 tspginger

Steps

20 minutes

    Heat oil in a pan. Crackle my stars. Add green chillies, curry leaves and asafoetida. Add capsicum, salt and fry a bit. Add peanut powder, red chilli powder and turmeric powder. Mix everything well. Cook for minute or two.

    Add potatoes. Combine everything well. Mash them a bit if they are looking a bit hard and dry. You may also add a bit of water to soften them and to make them look mushy.

    Add ginger, lemon juice and sugar. Combine well. Cover and cook on the minimum heat for a few minutes or until oil oozes out. Garnish with chopped coriander leaves and sesame seeds. It can be combined with roti or Puri and kadhi bhat.
