Steps
- 1
Wash and steam the potatoes. Once cool, peel the skins and cut into small pieces and set aside.
- 2
Heat coconut oil and saffola oil in a non stick pan. Add mustard seeds and allow it to crackle. Add cumin seeds, fennel seeds and asafoetida.
- 3
Add green chillies and saute for a minute.
- 4
Add the turmeric powder, red chilli powder, kashmiri chilli powder, garam masala powder and salt. Stir well so that all the spice powders including salt gets cooked in the oil. Do this on low flame so that none of the spices burn.
- 5
Add the chopped boiled potatoes and stir gently to coat with the spices and oil.
- 6
Cook it on low flame until all the potato pieces get encrusted with spices, around 7-8 minutes, turning occasionally.
