Ingredients

4 servings
  • 1.5 cupsaromatic short grain or Basmati rice
  • 1/2 cupboiled chickpeas
  • 7-8beans chopped
  • 1carrot chopped
  • 1capsicum chopped
  • 3-4florets cauliflower chopped
  • 1onion chopped finely
  • 1onion sliced finely and fried
  • 1.5 tspginger paste
  • 3cardamoms
  • 5-6cloves
  • 1small stick cinnamon
  • 1/2 tspshahjeera
  • 1/2 tspgaram masala powder
  • To tastesalt
  • 2 tbspoil
  • 1.5 tbspghee
  • 1 tbspcoriander chopped

Steps

    Soak chickpeas overnight.Next day drain water and pressure cook chickpeas with 1.5 cups water,little salt and 1 pinch baking soda upto 3 whistles or till soft but not mushy.Strain excess water.Pressure cook rice with 4 cups water upto 2 whistles.Open lid after 2 minutes and strain.Spread out rice so that no lumps are there.Chop and stir fry all vegetables and onion with little salt. Add boiled chickpeas and toss.

    Heat ghee in a non stick wok and fry sliced onion till crisp.Set aside. Sprinkle shah jeera and half crushed whole garam masala.When they crackle,add fried vegetables with chickpeas.Add ginger paste,garam masala,salt to taste.Toss all.Add cooked rice and cook on low flame till well mixed.Garnish with crispy fried onion and chopped coriander.Serve hot with any curry or as it is with curd or raita.
