Ingredients

  • 1whole chicken (cut into pieces)
  • SPICE PASTE:
  • 12shallots
  • 4garlics
  • 2 cmginger
  • 2 cmgalangal
  • 2 cmturmeric (1 tsp turmeric powder)
  • 2 tspcoriander seed
  • 5red chillies
  • 1 tsppalm sugar
  • 1/2 tsppepper
  • OTHER:
  • 4kaffir lime leaves (tear)
  • 2lemongrass (white part only)
  • 1 tbsptamarind (remove seed)
  • 1 cupcoconut milk (250 ml)
  • 1 cupwater
  • Cooking oil

Steps

  1. 1

    Use food processor or blender to blend all the spice paste ingredients into a fine paste.

  2. 2

    Heat oil and fry the spice paste until fragrant.

  3. 3

    Add coconut milk and water. Mix well.

  4. 4

    Add kaffir lime leaves, lemongrass and tamarind.

  5. 5

    Add chicken, adjust the heat down (simmer), keep stirring and cook the chicken until it is tender (min. 30 minutes). Ready to serve.
