I learned this recipe from a Lebanese friend. It won't qualify as a vegetarian dish anymore, but this is also tasty with lamb or chicken. To prepare it with meat, finely chop the meat into bite-sized pieces, then sauté in a frying pan, season with salt and pepper, then place it on the plate in Step 2, then cover it with the yoghurt sauce and pinenuts. Light Eggplant Fatteh Light Eggplant Fatteh
This Eggplant Fatteh is a healthier and lighter version of the classic middle eastern Fatteh. Eggplant Fatteh is basically a layered eggplant and yoghurt salad. Layers of crispy pita bread, eggplant and tomato sauce, ground beef, and yoghurt sauce, topped with pine nuts, parsley, and pomegranate seeds. For a healthier Fatteh , Instead of deep frying the eggplant cubes and the pita bread squares, I cooked the eggplants with the tomato sauce on the stove and toasted the bread in the oven. palibites -

Fatai (Lebanese Meat Pies) Fatai (Lebanese Meat Pies)
I looked up a recipe for my husband's beloved "fatai" (my husband calls it "fatai," but it's really called "fataya") and came up with my own version using more meat. The dough is a bit firm, but if you let it rest for a bit, it will be easier to roll out. When wrapping it up, don't completely close the top, but leave a gap so that it opens a bit while baking.
