For our sugar boot challenge, we have to get creative about “dessert”. These roasted carrots are awesome for a stand in. Just make a plate of them for the center of the table. In days without sugar, they tasted carmely sweet.

Ingredients

40 minutes +prep time
2 people
  1. 3large carrots, sliced 1 inch or less thick, I cut on a bias
  2. 2 tablespoonsbalsamic vinegar
  3. 1 tablespoonmustard, regular or Dijon
  4. 1/2 tspgarlic powder
  5. 1/2 tspcumin
  6. Pinchsalt and pepper to taste
  7. 3 Tablespoonsolive oil

Cooking Instructions

40 minutes +prep time

    Preheat oven to 400 degrees. Line a baking sheet with aluminum foil or parchment paper

  2. 2

    Mix balsamic vinegar and mustard. Add seasonings. Mix in olive oil to blend. Add in carrots and mix well.

    Spread carrots out onto baking sheet. Bake for 20 minutes and then flip over, or stir. Continue baking to desired crunchiness. I did about 20 extra minutes. Enjoy! They are awesome!

    Of course, the dessert idea is just that, an idea. This is a great side, it pairs with anything, and we can see Thanksgiving coming up. No token vegetable here, they would get eaten!
