Ingredients

40 minutes

  1. 1 cupall-purpose flour/maida
  2. 1/4th cup gram flour/besan
  3. 1/2 teaspoonbaking soda
  4. 1 teaspoonbaking powder
  5. 2 tablespoonssooji/fine rava
  6. 2-3 pinchesnutmeg powder or grated nutmeg
  7. 1/2 teaspooncardamom powder
  8. 1/2 cupghee or butter at room temperature
  9. 1/2 cupsugar or 2/3rd cup powdered sugar
  10. 1/2 tablespoondahi/yogurt
  11. 1-2 tablespoonmilk
  12. Few almonds or chironji (Charoli)

Steps

  1. 1

    Grind the sugar in a mixer and make a fine powder.

  2. 2

    Take an electric mixer and blend ghee with powdered sugar. You can also cream it in a food processor.

    Blend until the mixture becomes smooth, light, and creamy.

  4. 4

    Sift all-purpose flour, besan, baking powder, and baking soda. Keep the sifted dry ingredients aside.

  5. 5

    Now add yogurt or cream ghee and sugar mixture and mix them well.

  6. 6

    Now add dry ingredients into the mixture and add sooji, cardamom powder, and nutmeg powder.

  7. 7

    Mix everything gently and avoid kneading the dough.

  8. 8

    Just mix and gather into smooth dough. If the mixture is crumbly and you can’t bring the dough together, add 1-3 tablespoons of milk. Mix lightly and make the dough.

    Make medium sized balls from the dough.

  10. 10

    Roll them evenly into your palms and slightly flatten them.

  11. 11

    Press Chironji or almonds on the top lightly.

  12. 12

    You can also make some criss-cross designs on the naan khatai with the help of a fork or toothpick.
