Strawberry Jello with Pulp Made with Agar (Kanten)

I was in the mood for a dessert made with kanten instead of gelatin.
If you don't have a food processor, just mince the strawberries and mash them with a fork.

Cooking Instructions

Wash and hull the strawberries. Place in a food processor and pulse with lemon juice into a purée.

Combine the water, sugar, and kanten and heat. Bring to a boil while stirring constantly. Once it reaches a boil, reduce to low and simmer for about 2 minutes until the kanten dissolves.

Turn off the heat and add the honey. Once the honey is dissolved, add the strawberry purée. Try not to create bubbles when stirring.

Skim off any scum on the surface and pour into serving dishes. Chill until set.
