Cooking Instructions

Prepare the ingredients we will use. (These ingredients are for two recipes: the right side for meatballs and the left side for Juan Llorca's broccoli muffins)

First, roast the sweet potato. Cut it in half and cook in the oven or microwave in a Lékué-type container (or wrapped in plastic wrap) for 10 minutes.

Cook the quinoa according to the package instructions (usually 1 part quinoa to 3 parts water). Rinse the quinoa beforehand until the water runs clear.

Grate the broccoli or chop it using a food processor or blender.

Mix all the ingredients: quinoa + sweet potato + broccoli + oats. The mixture should have a manageable consistency.

Form into balls and bake in the oven for 20 minutes at 350°F (180°C).

I used the meat mixture I used for a meatball recipe I uploaded earlier, combined with the chili sauce I used in.Make the meatballs in bulk and freeze them - they're handy to have in stock.If you add 1 teaspoon of katakuriko dissolved in 1 teaspoon of water, the chili sauce will become slightly thickened like ankake sauce.
