Bruschetta is an antipasto from Italy consisting of grilled bread rubbed with garlic and topped with olive oil and salt. Variations may include toppings of tomato, vegetables, beans, cured meat or cheese.

(1). For Bruschetta Bread - Mix sugar and yeast in warm water and let it rest for 10 minutes.
In a bowl add all-purpose flour, warm water containing yeast and sugar, salt, olive oil and knead a soft dough. It will be super sticky. - 2
Grease the container add bread batter and flatten it applying oil and let it rest for 50 minutes in warm place.

After 50 minutes, the gluten is activated. Fold the dough from both sides and let it rest for 30 minutes.

After 30 minutes, repeat the folds and let it rest for 30 minutes more. After 30 minutes fold it again.

Now spread some flour on kitchen counter. Shape the dough like a log. Transfer it in baking tray and let it rest for 40 minutes.

After final rising of 40 minutes, bake it in preheatedoven at 230°c for 20-25 minutes.

(2). For toppings - Heat olive oil in a pan, add onions, bell peppers, corns and sauté for 5 minutes. Add jalapenos, oregano, chilli flakes and mixed herbs and mix well.

Cut the bruschetta bread in slices, apply mayonnaise add topping, add mozzarella and garnish with olives.

Bake this for 5-8 minutes on 180°c or till the mozzarella cheese melts, sprinkle oregano and chilli flakes & serve hot.
