Okara Muffin with Banana and Yogurt

I wanted to eat delicious muffins without oil, so I created this recipe.
I used over-ripened banana. This adds more flavour and makes delicious muffins.

Steps

Add the yogurt to the sugar, and mix until smooth.

Add the beaten egg, and mix some more.

Make banana paste or mash it with a fork in a separate bowl. Add the lemon juice, and mix. Add the okara, and mix well. Add this mixture to Step 2, and mix well.

Sift the cake flour, baking soda, and baking powder. Add cinnamon, and mix with Step 3.

Pour the batter into muffin cups, and tap on the counter to remove air. Bake for 20 minutes in the preheated oven at 180℃/350℉.

When cooled, if you don't plan to eat right away, put them in a plastic bag. They are moist and chewy muffins.
