The main speciality of Onam is Kerala Onam Sadya.In malyalam sadya means banquet.It is basically a vegetarian feast that is served during festivals, weddings etc..More than 10 dishes are made and served on a banana leaf. Varutharacha sambar is one of them.It is a delicious variety of sambar made with mix veggies,lentil, roasted spices and coconut.It's taste is different from the regular sambar which is made of sambar powder.

Cook dal in a pressure cooker for 7-8 min.with.salt and turmeric powder.Switch off the gas.Let it cool.

For sambar masala - Heat oil in a small pan,add chana dal,urad dal, Fenugreek seedssabut coriander seeds, whole red chilli and coconut pieces until golden brown.Let it cool and then grind.

Cook all the vegetables in a pressure cooker with 1cup water and salt.(One whistle)

Now Mix tamarind paste and spice paste into vegetables.Mix in lentil into vegetables mixture.Cook for 3-4 min.

For the tadka - heat oil in a pan,add mustard seeds,curry leaves,whole red chilli and red chilli powder in it.Saute and pour it into the sambar.

Your tasty sambar is ready to serve. Serve it with rice or idli.
