Steps

Wash and soak the rice and urad dal seperately for 4-6 hours. Drain the water and grind the rice and urad dal and Fenugreek seeds to fine paste. Mix both the batter and whisk well and keep it covered and allow to ferment.

Once the batter has risen, add salt and whisk well. It should not be too flowy nor too dense. Add water to adjust the consistency.

Grease the idli mould with ghee/oil and pour ladleful of batter. Steam the idlis for 8-10 mins.

Wait for 5 minutes and then scoop out the idlis with the spoon. Serve warm with coconut chutney or sambhar.
