🍚Rice Porridge (Congee)🍚

A very popular dish throughout Asia, congee is believed to help with hangovers and stomach aches, among other benefits. While I list China as its country of origin, it’s also eaten in Thailand, Korea (juk), and Japan. It’s usually served for breakfast, but you can enjoy it for lunch or dinner too. I’m a big fan, and my kids love it... I hope you enjoy it as much as we do!

Chop the vegetables and sauté for a few minutes. After 2 minutes, add the garlic and ginger.

Add the rice and sauté with the vegetables. Pour in half of the broth and add the potatoes, diced. Cook over low heat, gradually adding more broth as it reduces. Adjust the salt as needed until you have a very thick soup and the rice is very soft.

Garnish with sliced scallions and season with soy sauce or lime juice.
