Galette des Rois Frangipane with Chocolate Chips 👑

Preheat the oven to 350°F (180°C).

Make the pastry cream:
In a saucepan, heat the milk. Meanwhile, in a mixing bowl, whisk the egg yolks with the sugar until pale, then add the vanilla and flour. Mix well. - 3
Once the milk is hot, pour half of it over the egg mixture. Mix well, then return everything to the saucepan with the remaining milk. Cook over medium heat, stirring constantly, until the cream thickens. Pour into a bowl, cover with plastic wrap, and let cool.

Make the almond cream by mixing the melted butter, sugar, and almond flour together.
Once the pastry cream has cooled, add the almond cream and chocolate chips.

Unroll one sheet of puff pastry and spread the filling on top, leaving a border around the edge. Place the fève (trinket) in the filling and cover with the second sheet of puff pastry.

Seal the edges and decorate as you like. Brush the entire galette with a mixture of egg yolk and a little water.
Bake for 30 minutes.
