Gajar Mirchi Pickle is a very tasty pickle made in winter season.
Steps

Wash and peel the skin of carrot.Cut it into medium long pieces.Remove the stem of green chilli and slit it at centre. Peel the skin of ginger and cut it into long pieces.

Now place a kadai on stove and on low medium flame add the ingredients given under masala and dry roast it.Then transfer it on a plate and allow it to cool.Add it in a mixer jar and grind it to a coarse powder.

Now transfer coarse masala powder to a bowl.Add red chilli powder,haldi,hing, kalonji to it and mix it well.This masala I have made in more quantity, it can be stored and used in any pickle.

Now place kadai on stove,add oil to it. As oil gets hot add carrot,chilli and ginger.Saute it for 3 to 4 minutes.Do not saute more as the carrot should not become soft.The crunch should be there while eating.Add 3 big tbsp or 4 tbsp of the above prepared masala.I have used sesame (Til) oil which is used for pickle.

Now add required salt and mix well.After a minute off the flame. Allow it to cool a bit and add 2 tbsp of edible white vinegar to it and mix well.This will enhance the taste and act as a preservative.

Delicious Gajar Mirchi Adrak Pickle is ready.After 2 days only this pickle will taste good.As it will absorb the masala.
