'Aloo sabzi & spicy puri' (potato curry & Indian fried bread)

Wash & clean potatoes 🥔 pat dry them with kitchen towel, peel and cut and dice them, keep aside, heat ghee & oil, add carom seeds, cumin seeds, cinnamon sticks, add a pinch of asafetida for a few mins, add finely chopped onions 🧅, cook till soft and pink in colour, add ginger garlic paste 🧄, green chillies paste mix well, cook for 1 -2 mins, add finely chopped tomatoes 🍅, salt 🧂cook until tomatoes are soft.

Add turmeric powder, kashmiri chillies powder 🌶️, coriander & cumin powder mix well, add whisked plain yogurt mix well, cook till oil comes out, add diced potatoes 🥔, garam masala powder, dry mango powder 🥭, black salt, salt🧂 and mix well, cook for 2 mins and add water, cook until potatoes 🥔 are tender, serve with spicy pour, onion salad(' laccha pyaaz'), stuffed jalapeno.

For spicy 'puri': in a large bowl 🥣 add, whole wheat flour, semolina mix together, add salt 🧂, kashmiri chillies powder 🌶️, oil, dry fenugreek leaves 🌱, coriander & cumin powder, cumin seeds finely chopped coriander leaves 🌿, garam masala powder mix well, add water, knead into a stiff dough.

Make small balls from the dough, roll into rounds having 4 " diameter, heat oil fry the puris in medium hot oil, till they get puffed and are golden brown, remove fried 'puri' on paper napkin, to remove excess oil and serve hot with aloo 'sabzi'. Garnish with finely chopped coriander leaves 🌿

Note: it is kindly recommend that you fry 'puris' in batches.
