Make 2 cups spelt flour from 1 cup wheat berries in flour grinder attachment to dough maker, on fine setting. Or use 2 cups of regular whole wheat flour. Add 1 cup cold broth with vinegar, make dough ball. Start squeezing the dough in more cold broth till the starch has dissolved and the gluten and vitamin E oil are left, two washings. Now use 1/2 cup of cold broth to knead and wash the seitan a third time. When done, the dough will start feeling like tender young beef.

Make a marinade of cold broth, spicy fermented pepper sauce, palm sugar thick soy sauce, chopped shallots, smashed ginger strips, galangan powder, smashed lemon grass. Add seitan mock beef and knead. Rest to let flavors integrate. Remove smashed lemon grass and smashed ginger pieces.

For the rendang sauce: in your wok, fry all spices in Tbs peanut oil till fragrant, then bring to boil in coconut cream, then simmer till glaze appears over the rendang sauce. Set aside.

Form mock beef in pastrami size strips or hambuger size patties with your fingers, fry in cast iron skillet sprayed with peanut oil on both sides, put on plate. Pour rendang sauce over mock beef. Serve with fried rice.
