Seitan is made from spelt whole wheat, it is an all-round vegan meat substitute, it readily absorbs the flavors from broth and marinades used for beef, lamb, pork, chicken, duck.

We stopped raising our own beef, because we eat so little of it. Our grain grinder attachment to our kitchen mixer is used more and more as we discover new uses for spelt whole wheat, the way farmers used to grind their own grain harvest.

For me, seitan resembles meat more than my two other home made meat substitutes, tofu and tempeh, I like seitan texture and flavor as much as my other favorite, buckwheat spam. Recipes in cookpad.

Ingredients

Seitan 1/2 hour, rendang sauce 15 min
4 people
  • For the mock beef:
  • 1 cupwhole wheatberries, makes one pound, 2 cup size wheat flour dough ball
  • 1 cupwater with 2 Tbs vinegar
  • 1/2 cupcold beef or vegetable broth
  • 2more cups of cold broth to wash the starch out of the dough
  • For the Rendang marinade for the mock beef:
  • 1/2 cupbeef or vegetable broth
  • Tbsfermented pepper sauce, like sambal oelek or sambal Ijo
    California Farm Hot Green Pepper Sauce: Sambal Ijo
  • TbsPalm sugar soy sauce
    California Farm Fresh Thick Sweet Soy Sauce: Ketjap Manis
  • Cupchopped shallots
  • 6thin long crushed ginger slices
  • 1 Tbsgalangal powder
  • 2fresh lemon grass stalks, crushed
  • For the rendang sauce on top of the braised mock beef:
  • CupCoconut cream
  • 2makrut leaves, also called peroek or lime leaves, crushed
  • 1 Tspcloves crushed
  • 1 Tbsturmeric, ground
  • 4kemiri nuts, crushed
  • 4garlic cloves, crushed
  • Tspeach cardamon, cumin, coriander, ground
  • 2 TbsPeanut oil
  • Optional meat substitute: tofu

  • Optional meat substitute: tempeh
    California Farm Tempeh Soy Bean Cake
  • Optional meat substitute: Scrapple
    California Farm Made Spam
  • Equipment: dough mixer with grain attachment, cast iron sauce pan, cast iron skillet, wok
  • Cost: seitan 60 cents, coconut cream $2.50, spices $1, beef broth 10 cents, oil 40 cents, per person $1.18

Steps

Seitan 1/2 hour, rendang sauce 15 min
  1. 1

    Make 2 cups spelt flour from 1 cup wheat berries in flour grinder attachment to dough maker, on fine setting. Or use 2 cups of regular whole wheat flour. Add 1 cup cold broth with vinegar, make dough ball. Start squeezing the dough in more cold broth till the starch has dissolved and the gluten and vitamin E oil are left, two washings. Now use 1/2 cup of cold broth to knead and wash the seitan a third time. When done, the dough will start feeling like tender young beef.

    Make a marinade of cold broth, spicy fermented pepper sauce, palm sugar thick soy sauce, chopped shallots, smashed ginger strips, galangan powder, smashed lemon grass. Add seitan mock beef and knead. Rest to let flavors integrate. Remove smashed lemon grass and smashed ginger pieces.

    For the rendang sauce: in your wok, fry all spices in Tbs peanut oil till fragrant, then bring to boil in coconut cream, then simmer till glaze appears over the rendang sauce. Set aside.

    Form mock beef in pastrami size strips or hambuger size patties with your fingers, fry in cast iron skillet sprayed with peanut oil on both sides, put on plate. Pour rendang sauce over mock beef. Serve with fried rice.
