An easy-to-make Indian dessert. Made with semolina and spices, it can be served alone or with custard sauce.
Cooking Instructions

Custard Sauce: Heat the milk. Mix the egg yolks and sugar. Pour the hot milk over and mix well. Return to the heat and stir with a spatula until the sauce thickens.

The sauce is ready when it coats the spatula. Cover with plastic wrap and let cool.

In a pan, melt a pat of butter. Add the semolina and cook until it turns golden brown.

Mix the milk, water, cardamom, saffron, and sugar. Pour everything over the semolina. Cook, stirring, until the semolina completely absorbs the liquid.

Place in a rectangular dish and press down lightly.

Let cool or chill to your liking. Cut into squares. Coarsely chop the cashews and pistachios.

In a plate or ramekin, place a small ladle of custard sauce. Add the rose syrup. Then the semolina cake and finish with the nuts.
