Ingredients

20 minutes
20 balls
  • 2 cups(about 15-16) Medjool dates pitted, chopped
  • 1/2 cupmixed nuts (almonds, cashews, pistachio, rosted)
  • 2tblsp desiccated coconut, rosted
  • 2tblsp seems seeds, rosted
  • 2tblsp poppy seeds, rosted
  • 1/3 cupmixed seeds (pumpkin seeds, sunflower seeds, flax seeds, melons seeds, hempd seeds, golden linseed seeds rosted)
  • 4 tspunsalted butter, ghee or coconut oil
  • 1/8 tspcinnamon powder
  • 1/8 tspnutmeg powder

Steps

20 minutes
  1. 1

    Place the nuts in a non-stick pan with 1 tsp butter, ghee or oil. Lightly roasted the nuts for 5 minutes in a low flame.

    Repeat the same process with mixed seeds and desiccated coconut, sesame seeds and poppy seeds. Let them cool completely.

    Add the mixed rosted nuts in a food processor fitted with the S-shaped blade. Process until almost roughly crushed. Take out all the nuts in a plate and set a side.

    Add the dates in a food processor fitted with the S-shaped blade. Process until almost like a dough. Scoop the date paste with spoon.
    Place the date paste in a non-stick pan with 1 tsp butter. Lightly roasted the date paste for 5 minutes in a low flame. Scoop out the date paste with spoon. Let them cool completely.

    In a large tray Add date paste, crushed nuts, seeds, desiccated coconut, sesame and poppy seeds mixture with cinnamon, nutmeg powder mix everything is well combined, by hand becomes almost like a dough.

    Scoop the dough with your hand, a tblsp or a small ice cream scoop, and form it into small balls using your hands.
    If it is too sticky and hard to form balls, lightly grease your palm with butter, ghee or coconut oil.

    Enjoy the date energy balls right away or store them into an airtight container and place them in the fridge for up to two weeks and in the freezer for up to a month.

    #NOTES:

    #Mixed_Nuts:

    We need to use 1/2 cup of mixed nuts in total. I have used the nuts, which I prefer. But you can replace either one with your choice of nuts.

    #Roasting_The_Nuts:

    Lightly roasted nuts are more flavorful than raw. And so I prefer roasted nuts over raw. But toasting nuts is optional you can skip that step and use raw nuts in the recipe.

    If you want to use oven place the nuts on a baking sheet lined with parchment paper. Lightly toast the nuts at 350° F for 5 minutes.

    #Dates:

    Medjool dates are my favorite. They are more naturally sweetened than other varieties. Also, they are large, juicy, and very soft. But you can use your favorite dates.

    #For_Hard/#Dry_Dates:

    Soak hard or dry dates in warm water for at least 10-12 minutes. And drain them well before using them in the recipe.
