Ingredients

Serves 2 servings
  1. 7 ozsquid (about 200 grams, such as spear squid)
  2. 1 tablespoonsoy sauce
  3. 1 tablespoonmirin (sweet rice wine)
  4. 1–1 1/4 inch (2–3 cm) ginger (from a tube or freshly grated)
  5. 1/2 teaspoongranulated dashi (about 2 grams)
  6. Sake, as needed (for boiling)

Steps

  1. 1

    Cut the squid into bite-sized pieces (pre-cooked squid can be used).

  2. 2

    Boil water with sake, then add the squid. Do not let the water boil vigorously, as this can make the squid tough. Just blanch the squid briefly.

    Lightly coat a heated frying pan with vegetable oil, add the squid, then stir-fry with the pre-mixed seasonings marked with ★.

    When the liquid has evaporated and the squid is glossy, it’s ready to serve!
