Ingredients

24 - 30 cookies
  1. 125 gButter *using less butter makes thicker & softer cookies!
  2. 3/4 cupSugar *1/2 cup is quite OK
  3. 1Large Egg
  4. 1 cupSelf-Raising Flour
  5. 1 cupDesiccated Coconut

Steps

  1. 1

    Preheat oven to 170 to 180°C. Line base of a baking tray with baking paper.

  2. 2

    In a bowl, mix softened Butter and Sugar together until smooth, then add Egg and mix well until light and fluffy.

  3. 3

    Add SR Flour and Coconut and combine.

  4. 4

    Drop dough by teaspoonfuls or about 2cm balls onto baking paper on tray. Cookies need plenty space around each because they will melt and go flat & large.

  5. 5

    Bake for about 10 minutes in the preheated oven, or until lightly golden. Cool on wire racks.
