Microwave Ramen for One! Delicious Homemade Ramen

All you need is a microwave and a bowl!
Here's how to make a single serving of ramen soup, which I shared before.

Wrap the spinach and microwave at 600W for 2 minutes.

After microwaving, cool the spinach under running water while still wrapped.

Cooling with water keeps the color bright, even after some time.

Slice the naruto fish cake and prepare the nori seaweed.

Add 2g Chinese soup base to a bowl.

Add 1/2 clove dried garlic.

Add a pinch of onion skin powder.

Add 2g scallop soup base.

Add 2g fish sauce (nam pla).

Add 1 tablespoon soy sauce (15ml).

Pour in 1 cup hot water (230ml) and mix well.

Add a few drops of scallion oil for extra flavor and aroma.

Cover the bowl with a lid or plastic wrap.

Microwave at 600W for 3 minutes.

Meanwhile, cook the somen noodles until just slightly firm.

Once the soup is hot, it's ready. Be careful when removing from the microwave—it will be very hot.

Add the slightly firm, rinsed somen noodles to the soup. (Somen noodles are salty, so be sure to rinse them after boiling!)

Microwave at 600W for 2 more minutes. (The bowl will get very hot, so handle with care!)

Add your toppings and enjoy! I like to top the nori with black pepper for a nostalgic Shina soba-style finish.
