Prepare the ingredients. Sprinkle the chicken with salt, pepper, and paprika to taste. Heat the olive oil over medium heat and sauté the chicken.

Once the chicken is browned on all sides, add the celery and onion. Mix well.

Cover and cook until the vegetables are tender. If needed, add a tablespoon of water. Add the parsley and lemon juice, and check the seasoning.

Finally, mix in the quinoa and heat through. Enjoy!
