Ingredients

30 minutes
2 servings
  • Fresh spinach
  • Arugula
  • 1chicken breast - cooked & diced - we cook up several in advance using the Instant Pot for a week's supply
  • 2shallots - minced
  • 2carrots - diced
  • 2celery stalks - chopped
  • 1 Cupblueberries
  • 1 Cupwalnuts
  • 1pink lady apple - diced
  • 10delgot noir dates - chopped - Caution - if you aren't used to eating dates, ease into this quantity
  • Olive oil
  • Red wine vinegar
  • Sea salt
  • Fresh ground black pepper
  • 1/2 cupgreen olives - pitted & chopped

Steps

30 minutes
  1. 1

    Add spinach and arugula to a large bowl.

  2. 2

    Add carrot, celery, walnuts, blueberries, apple, dates

  3. 3

    Add chicken

  4. 4

    Salt and pepper to taste

  5. 5

    Dress with olive oil and red wine vinegar to taste.

  6. 6

    Serve it up!
    (I add the olives to mine after, as not everyone wants olives.)
