I make a simple version of bún bò to suit my taste. Since I don't like eating pig's feet and knuckles, I only use beef. But personally, I still find it delicious 😄

Cooking Instructions

Clean the beef, crush the lemongrass, garlic, ginger, and half an onion, and add them to 6 1/3 cups of water. Boil on the fast cook setting for 30 minutes in a rice cooker.

Prepare the green onions, cilantro, and slice the remaining half onion thinly.

Once boiled, remove the beef and slice it into thin, bite-sized pieces.

Add 4 tablespoons of fermented shrimp paste, 2 tablespoons of fish sauce, and 1 tablespoon of annatto oil to the broth and continue on the fast cook setting for another 30 minutes.

When the broth is boiling, arrange the noodles and seasonings in a bowl and enjoy with fresh mint, bean sprouts, chili paste, and lime.

The funky salted savory sweet soup broth balances with the bitterness fresh veggies, along with the spicy chili and a squeeze of lime, just makes this bowl of noodle soup overwhelmingly flavorful. I saw this recipe in a magazine before, but I uploaded it here since it's so delicious.If you can't eat them all, cover with cling film to stop them from drying out.
