    Use Taiwanese potatoes for the best taste.

    Wash and peel the potatoes, then cut them into strips, trying to keep each fry the same size (about 8mm x 8mm as an example).

    After cutting, the potatoes will release starch, making the water cloudy. Change the water and soak for about 10 minutes. (The picture shows the water after changing.)

    Place the fries in a pot of fresh cold water and bring to a boil. Once boiling, reduce to a simmer and cook for about 5 minutes (time depends on thickness; they don't need to be fully cooked. After cooling, a thin skin will form, which makes them taste better when air-fried). After removing, you'll notice a slight transparency on the outside of the fries.

    Place in front of a fan to dry. When touched, they should feel like they have a thin skin and be slightly sticky.
