These curry dumplings are made with agar, which is high in dietary fiber.

I created this recipe by adding agar powder to leftover curry, making it easier to wrap in dumpling wrappers.

Dissolve the agar powder in water and add it to the leftover curry. Heat the mixture, then let it cool slightly and refrigerate until set.

Once the curry with agar has solidified, scoop out about 1 spoonful and wrap it in a dumpling wrapper.

Pour enough vegetable oil into a pan to deep-fry the dumplings.

When the oil is hot, add the dumplings and fry until the wrappers are crispy. Transfer to a plate and serve.
