Whole Jowar Upma in Pressure cooker

Millets are a superfood. One of the most prominent and widely eaten among them is Sorghum or Jowar which is also known as Jolar/ Jolada / Jondhala and Jwari . This is rich in iron, calcium, magnesium, fiber, phosphorus, folate and protein. They are nutritious and need to be eaten regularly. First, take a pressure cooker and heat ghee in it. Add mustard seeds, Urad dal, chana dal and let them pop up. Then add green chillies, ginger, curry leaves, and saute well.

Then saute onions, tomatoes for 5 minutes and all cooked veggies. Once they are aromatic, drain the jowar and saute for 5 minutes with the veggies. Then add salt, sugar, chilli powder, cumin powder and mix well.

Then add hot water, and once it starts boiling, add the jowar, keep stirring till there are no lumps. Now close the lid. Add weight and pressure cook for 6 whistles. Then turn off the heat.

Once pressure has completely subsided, open the lid. Turn well and add 1 teaspoon ghee on top. Add lemon juice, some coriander leaves and mix well.

Transfer to a serving plate. Garnish with more coriander leaves, Sev (optional)and serve hot. Enjoy!

Tip: wash the Jowar well, dry on a cloth in shade and then grind coarse.
