Fenugreek leaves, also known as methi is considered one of the healthiest green leafy vegetables.
Steps

Remove the stems from the fenugreek leaves and pick only the leaves. Soak them in enough water and keep aside for 5-10 minutes.

Then drain all the water. Squeeze the fenugreek leaves while removing them from the water or put them in a colander to drain completely.

Then chop fenugreek leaves roughly or coarsely. Chop Onion and garlic cloves finely.

Heat oil in a non-stick pan or kadai on medium heat. Once hot, add cumin and let it splutter well.
Then add chopped garlic, curry leaves, green chillies and saute for a minute or until the raw smell of garlic goes away. - 5
Add hing, turmeric and saute for few seconds. Then add the chopped onion and saute until transparent.

Add salt, red chillies and stir for a minute. Then add fenugreek leaves and mix well.

Cover and cook for 3-4 minutes or till fenugreek leaves are cooked. Fenugreek leaves cook quickly, so check after 3 minutes. Some moisture is released.

Remove the lid, now add sugar and cook on high flame for 1-2 minutes. Stir continuously until the moisture in the leaves dries up and the leaves are cooked.

After the moisture evaporates, the sabzi will be ready. Switch off the flame.

Remove Fenugreek leaves sabzi into bowl and serve it.
