Prepare the fennel on the cutting board. Cut off the stalk, then cut the bulb in half.

Take one half, cut it in half again, and separate the layers. Wash them and slice very thinly.

Now peel the orange, removing all the peel and white pith. First, cut off both ends of the fruit. Then, cut away the peel all around.

Remove any remaining white parts with a sharp knife.

Once the orange is completely peeled, you'll see the white lines separating each segment. Use a knife to cut along the sides of these lines to get clean, skinless slices—perfect for salads and fruit salads.

Slice the olives into rounds.

In a salad bowl, combine the arugula, fennel, olives, and orange slices.

In a small bowl, mix the extra virgin olive oil, salt, pepper, and fresh lemon juice if desired. Stir and pour over the salad. Toss well to coat all the ingredients, and serve with plenty of fresh bread.
