Slice the pork thinly. Finely chop the onion, garlic, and lemongrass, then add to the pork. Add salt, cane syrup or molasses, vegetable oil, and five-spice powder. Mix well and marinate in the refrigerator for 2-4 hours.

Mix sesame seeds into the pork. Arrange the pork in an air fryer and cook at 400°F (200°C) for 10-15 minutes, until fragrant and slightly charred at the edges.

Cook the brown rice vermicelli noodles according to the package instructions. Drain well. While the noodles are still warm, spread them on parchment paper, cover with another sheet of parchment, and press down with a heavy object to compact.

Once the noodles have cooled, cut them into 1.5 x 2 inch (4 x 5 cm) pieces to make homemade 'brown rice noodle sheets.'

Wash the cucumbers, then toss with salt and sugar to use as a fresh side vegetable.

Mix fish sauce, sugar, water, and lime juice in a 1:1:3:1/2 ratio, then add finely chopped chili and garlic.
