Bitter gourd pickle
Steps

Clean the bitter gourd with plain water, wipe it, cut into thin length pieces. Add salt and turmeric powder to the bitter gourd pieces, mix well. Keep it for fifteen minutes. Squeeze out the water from bitter gourd to remove bitterness. Keep aside.

Keep the peeled garlic, mustard powder, Fenugreek seeds powder and curry leaves ready. Prepare tamarind extract,keep it aside.

Keep a kadai,add gingelly oil, let it hot, add the bitter gourd pieces,fry for five minutes.It become half in size, Remove from heat.

Keep an another kadai on medium heat, add mustard seeds,curry leaves, red chilli, and garlic. Fry for two minutes,then add red chilli powder and salt, saute for few seconds.

Add the tamarind juice,let it cook for some time.

Now add fried bitter pieces, mix well. Add mustard powder and Fenugreek powder. Mix well.

At last add jaggery powder,mix it well for five minutes. All water dry well. Oil comes out, pickle is ready. Remove from heat.Let it coll

Tranfer the pickle to a glass bottle or bowl. It's very tasty pickle. You can store it out side for month. In the refrigerator it can stay for six months if you add little more oil.

Enjoy the tasty bitter gourd pickle with all variety rice,curd rice and chapathi.
