For Homemade Kuttu Flour: Keep whole Kuttu in sunlight for an hour or lightly roast it. Cool and take in mixer jar. Crush to a fine flour.

Crush the sieved flour again for a smooth fine flour. Ready all the ingredients for chilla. Wash, peel and dice the doodhi and crush to a fine paste.

Now take Kuttu flour, curd, ginger-chilli paste, salt and doodhi paste in a mixing bowl. Mix and add in water as needed and mix.

Mix to get a smooth lumpfree free flowing batter.

Rest batter for 5-10 minutes. Heat a tava and spread the batter to form a thin chilla. Since this is a gluten free batter, it may crack a bit. Roast using melted ghee Or oil. Turn and roast other side also.

Fold and take on a plate. Similarly, make other chillas slso. This measure makes 6-7 chillas. Serve hot with green chutney.
