Sweet and Spicy Pan-Fried Salmon

On a chopping board, pat dry the salmon fillets with kitchen paper towel.

Sprinkle salt, black pepper, white pepper and Cajun seasoning on the salmon. Set aside to dry.

In a medium sized bowl, add the soy sauce, sweet soy sauce, honey and maple syrup. Stir until mixed well.

Add garlic powder, chilli powder and chilli flakes. If you don't like spicy, just a sprinkle of chilli powder and chilli flakes will do. Mix well.

Using a frying pan, heat up sunflower oil on high heat for a minute.

Once the pan is sufficiently hot, placed the salmon fillets skin side down in the pan. Let it sit and fry for 2 minutes until it starts to be fragrant and the skin is seared.

Turn each salmon upside down so the flesh is on the pan.

Place garlic and onions in the pan and stir around the salmon until it starts to be fragrant, about 1 minute.

Add the sauce mixture to the pan. Baste the salmon with the sauce using a large spoon for 1 minute.

Flip the salmon back on skin side down and continue to baste the salmon with the sauce until the sauce is boiling.

Serve the salmon on a plate coupled with cooked rice, and cover the salmon and rice in sauce.

Additional step for vegetables: after taking the salmon out of the pan, add asparagus or broccoli into the pan and cover it in the same sauce. Cook until the vegetables are soft enough to be pierced with a fork. Serve and enjoy!
