Dry roast yellow mustard seeds, cumin seeds and methi seeds for 2 to 3 minutes on low flame heat then turn off the flame. Let it cool completely then blend in mixer until smooth and keep aside. Now cut the green mangos into small pieces and keep aside.

Heat a thick bottom Kadhai add mustard oil. Once the oil is hot add Panchphoran and hing and saute until crackle. Then turn off the flame and add all above the masala and mix it well nicely. Now turn on the low flame and add pieces of mangos and mix it.

Cover the lid and cook for mango pieces for 8 to 10 minutes on low flame heat. Then turn off the flame. Aam ka instant achar is ready. Let it cool completely then transfer the glass jar and keep it in refrigerator. Enjoy for atleast 1 to 2 month. Always keep in fridge.
