In a Bowl add the bitter gourd slices, turmeric and salt. Mix it well.

Allow it to rest for at least 15-20 minutes.

Soak tamarind in a cup of water.

Meanwhile make the nallakaram podi.

After 20 minutes squeeze excess water from the bitter gourd slices.

Extract the pulp from tamarind and add it to the bitter gourd slices, let it boil until the tamarind extract gets absorbed completely.

In a frying pan add required oil for shallow frying of the bitter gourd slices and fry it till crisp in medium high flame.

Add nallakaram and stir it well.

After cooling preserve it in a container.
