Prepare Corn Paste : In a blender jar, add boiled sweet corn kernels and green chilli pieces. Blend coarsely without adding much water.

Make Batter : In a mixing bowl, combine semolina and curd. Add the coarsely ground corn-chilli paste, turmeric powder, salt, and water as needed to form a medium-thick batter. Cover and rest for 10 minutes.

Prepare Steamer : Heat water in a steamer and grease a dhokla tin/plate with oil.

First Layer : Take half of the batter in a separate bowl, add 1/2 tsp of Eno, mix gently, and pour it into the greased tin. Steam for 5 minutes until slightly set.

Chutney Layer : Remove the tin from the steamer and spread an even layer of green chutney over the first layer.

Second Layer : Add the remaining Eno to the rest of the batter, mix gently, and spread it evenly over the chutney layer.

Steam : Place the tin back in the steamer, cover with a lid, and steam on medium flame for 12 to 15 minutes.

Cut & Garnish : Once cooked and slightly cooled, cut into triangular (sandwich) or square pieces. Sprinkle a pinch of red chilli powder on top for garnish.

Serving Suggestion :-
Serve hot Layered Corn Stuffed Dhokla with spicy green chutney and garlic-tomato red chutney.
Tips
∆ Coarsely grinding the corn instead of making a fine paste gives a great texture to the dhokla.
∆ Ensure the first layer is slightly set before spreading the chutney so the layers remain distinct.
