This cranberry sauce is definitely a process but its well worth it. Take the cranberries and put them in a pot of room temperature water and let the water and the cranberries heat at the same time. Turn stove on high heat. Add the sugar, cinnamon stick, and the star anise to the cranberries. Now depending on how sweet you want yours determines how much sugar you want to add tbrough the process. Let the berries cook in a covered pot for about 2 hours. By that time the cranberries will have started to pop open. Just keep letting the sugar cook down and thicken up four about another hour. Add the orange juice and orange peels and stir together. Put top back on the pot and let go for about another 2 hours but trun your heat down on a medium to low heat. The next time you check the sauce it should be thick with juice but still thick. Its ready to go on juice about anything you make for the holidays.
