Really easy, and you can just leave it to simmer while you prepare other parts of the meal.

Cooking Instructions
- 1
Pour a little oil in the bottom of a saucepan and add your chopped onions. Gently heat until they begin to soften.
- 2
Add your Thai red curry paste and continue heating for approximately 1 minute.
- 3
Add your chicken and mix to coat your chicken.
- 4
Pour in your coconut milk, and then add the rest of your ingredients.
- 5
Heat to boiling, then reduce to a simmer for 15 minutes.
- 6
Keep stirring throughout, and when the time is up, serve and enjoy!
- 7
Remove your lime leaves (or use them as garnish). Don't leave them mixed in though, I don't find them great to munch on!

Eggplant & Chicken Thai Red Curry Eggplant & Chicken Thai Red Curry
Thai curry is one of our go to takeaways when we order out, but we often found that a single order wasn't enough to fill us up. To make a more satisfying homemade version, I decided to bulk it up with eggplant, which I love for its texture and flavor. This recipe yields 4 generous servings of a bold, spicy red Thai curry—perfect for enjoying leftovers! lilis.home -

I made this curry very often and tried to perfect it. I like this balance of ingredients, but you can adjust to your liking. More curry paste for more spice, more coconut milk for a softer taste. My girlfriend cant take it when food is too spicy and I like spicy, but this balance is perfect for both of us. Pick a good curry paste, some are without additives with only fresh herbs. You can also make the curry paste yourself but you need a lot of exotic herbs and a good recipe. Enjoy! sjonnie -
