Ingredients

  1. 2chopped, cooked chicken breasts
  2. 1/2 mediumred onion, finely chopped
  3. 1/2 mediumwhite onion, finely chopped
  4. 1 tbspfish sauce
  5. 1 tbsplime juice
  6. 1 tspbrown sugar
  7. 400 mlcan coconut milk
  8. 4dried kaffir lime leaves
  9. 25 gramschopped coriander
  10. 1 tbspThai red curry paste
  11. 100 gramsbamboo shoots
  12. 100 gramswater chestnuts
  13. 1/2 tbspsoy sauce

Cooking Instructions

    Pour a little oil in the bottom of a saucepan and add your chopped onions. Gently heat until they begin to soften.

    Add your Thai red curry paste and continue heating for approximately 1 minute.

    Add your chicken and mix to coat your chicken.

  4. 4

    Pour in your coconut milk, and then add the rest of your ingredients.

  5. 5

    Heat to boiling, then reduce to a simmer for 15 minutes.

  6. 6

    Keep stirring throughout, and when the time is up, serve and enjoy!

  7. 7

    Remove your lime leaves (or use them as garnish). Don't leave them mixed in though, I don't find them great to munch on!
