I originally saw this idea posted by a friend on Facebook and thought it sounded like an interesting alternative to ham salad (because let's face it ham can be expensive). I took the basic idea posted and modified it with some of my own changes and additions. It's actually really yummy!

Bologna Salad

Ingredients

  1. 1/2 lbbologna
  2. 2hard boiled eggs - finely chopped
  3. 1/4 cupcheddar cheese - finely diced
  4. 1/4 cupmayonnaise
  5. 2 tbssweet pickle relish
  6. 1 tspyellow mustard

Cooking Instructions

    Pass bologna through a meat grinder or finely mince, place in large bowl, and continue to mash into tiny pieces with a fork (the latter is what I chose for today because I didn't feel like pulling out my meat grinder).

    Place all ingredients in a large bowl and mix to fully combine. No need for salt because all ingredients contain salt. You could add pepper if desired though.

    Transfer to a container with a lid. Store in fridge. Enjoy!
