  1. ● For The Veggie Noodles
  2. 2EX LG Spaghetti Squash [halved]
  3. DashGranulated Garlic Powder
  4. DashGranulated Onion Powder
  5. DashFresh Ground Black Pepper
  6. as neededOlive Oil Spray [to seal seasonings on squash]
  7. ● For The Sauce
  8. 1 lb80/20 Hamburger Meat [drained - optional]
  9. 2LG Chopped Tomatoes
  10. 1/2Chopped Red Bell Pepper
  11. 1/2Chopped Yellow Bell Pepper
  12. 1/2Chopped Orange Bell Pepper
  13. 1/2Chopped Green Bell Pepper
  14. 1/3 CupChopped Red Onions
  15. 4 ozCan Minced Black Olives
  16. 1/3 CupChopped Vidalia Onions
  17. 1/3 CupChopped Green Onions
  18. 2 tbspChopped Sun Dried Tomatoes
  19. 1 (4 oz)Can Drained Chopped Mushrooms
  20. 2 tbspFine Minced Garlic
  21. 2 CansSpaghetti Sauce
  22. 1 tspFresh Ground Black Pepper
  23. 2 tbspGranulated Sugar [or more]
  24. 1 tspDried Oregano
  25. 2 tspPureed Basil
  26. 2Bay Leaves
  27. 1/3 CupQuality Red Wine
  28. 1-4 ozCan Tomato Paste
  29. DashQuality Olive Oil
  30. 1/2 CupShredded Parmesan Cheese [+ reserves for topping]
  31. ● For The Sides
  32. Toasted Garlic Bread [with garlic butter]

Cooking Instructions

  1. 1

    Here's the bulk of what you'll need. Rough chop all vegetables.

  2. 2

    Saute your vegetables in olive oil for 5 minutes. Add everything to your pot - except for squash - and simmer for 30 minutes.

    Use a quality deep red wine.

  4. 4

    Season squash and spray with olive oil.

  5. 5

    Place in a 350° oven for 60 minutes.

  6. 6

    Shread squash with a fork and place in bowls.

  7. 7

    Toast your garlic bread until crispy.

  8. 8

    Serve sauce over noodles with garlic bread and a quality red wine. Garnish with shredded parmesan and fresh parsley. Enjoy!
