Crush the garlic well using a mortar and pestle, then add the cumin and crush again.

Pour the oil into a pot and add the green chili pepper to fry. Make a slit in the chili and sprinkle some salt inside before frying.

Take half of the garlic mixture and sauté it in the oil.

Add the tomato paste and sauté well, then add salt and ground red pepper.

Add the water and let it boil for 5 minutes. Add the potatoes and cook for 10 minutes. Then add the fish and the remaining garlic mixture, and cook for another 10 minutes.

Place the couscous in a bowl, add cold water, and mix it gently. Let it absorb the water and dry out. Once dry, add the oil and salt.

Transfer the couscous to a steamer (couscoussier) and poke a few holes in it.

Once steam rises through the couscous, sprinkle some of the broth over it.

Serve the couscous on a platter, topped with the fish, potatoes, and chili pepper. Enjoy! 😊
