Cooking Instructions

Place oatmeal,flour,and ginger in a bowl, mix well.

Place margarine sugar, syrup, treacle and milk in a large bowl microwave on 100% for 5 mins, stir every minute. Stir in flour margarine, mix well.

Grease and line the base of a deep, square 20cm (8") dish with greaseproof paper, pour in parkin mixture.
- 4
Place on low rack and bake on dual convection, 180 c, 30% for 27 minutes until well risen and a skewer comes out clean.

This is very similar to my cottage pie recipe. The main difference is that cottage pie has beef, sheppards pie has lamb or goat. I used both lamb and beef. And of course added my own little twist to keep away from main stream dining. this was a giant hit at the dinner party I served it at. Great one pan meal. It's the original 'Hot Pocket'.When Cornish miners emigrated to mining communities around the world, they shared this tradition. My grandma grew up in Gold Country here in CA where pasties are as much a part of local culture as they are in Cornwall.This isn't really your standard pastie though. I strayed from traditional recipes in that I used a little sourdough starter to improve the flavor of the crust. And the spices in the filling are probably not standard either. But I'd say you can fill these guys with just about any thick, stew-like substance you like. If you want to make your own filling, just skip straight to step #8.This is definitely a big project, but well worth the work. Ryan Goodwin
