  • 5 poundspotatoes, cooked, peeled and diced
  • 2hard-cooked eggs, chopped
  • 1/4 cupthinly sliced green onions
  • 1/4 cupfinely chopped green or sweet red pepper
  • 1/4 cupminced fresh parsley
  • 1small garlic clove, minced
  • 6 slicesbacon, cooked and crumbled
  • 1 teaspooncelery seed
  • 1 teaspoondill weed
  • 1 teaspoonsalt
  • 1/2 teaspoonground pepper
  • DRESSING:
  • 3/4 cupmayonnaise
  • 2 tablespoonssour cream
  • 1 teaspoonhorseradish
  • 1 teaspoonDijon mustard
  • 1 pinchoregano
  • 1 pinchchives

    In a large salad bowl, combine the first 11 ingredients. Set aside

    Combine dressing ingredients; pour over potato mixture and toss to coat.

    Cover and refrigerate for up to 24 hours.
