Ingredients

  1. 2 1/4 lbsfrozen cauliflower or 1 large fresh cauliflower
  2. 1 packagebacon strips
  3. 1large onion or scallion
  4. 3 clovesgarlic
  5. 3/4-1 cupevaporated milk (200-250 ml)
  6. 1 splashwhite wine
  7. 1little cheese for gratin (I used shredded Emmental)
  8. 1 pinchherbes de Provence, oregano, basil... (Optional)
  9. Salt, pepper, and extra virgin olive oil

    First, place the cauliflower in the steamer. If it's frozen, put it in directly without thawing, and if it's fresh, wash it, separate the florets, and place them in the steamer. I steam it for about 25 minutes until tender but not falling apart, although the time will depend on your steamer. If you don't have a steamer, boil it in a pot. For frozen, follow the package instructions, and for fresh, add it once the water boils. Check it, and when it's tender, drain it.

    While the cauliflower is cooking, peel and slice the garlic and cut the onion into thin strips. Then, add a little extra virgin olive oil to a low pot or large skillet to sauté the garlic. Once it colors, add the onion, season with salt and pepper, and sauté over low heat.

    When the onion becomes translucent, add the bacon. Once the bacon is golden, pour in a splash of wine and any spices you like (herbes de Provence, oregano...), and let it reduce.

    If the cauliflower is cooked, add it to the pot, mix well but gently, and adjust the salt.

    Once everything is well mixed, pour in the evaporated milk and let it thicken over low heat.

    When it has thickened, turn off the heat and transfer it to an oven-safe dish. Sprinkle the shredded cheese on top and broil in the oven for about 8 minutes (depending on your oven). Take it out and enjoy!
