Ingredients

6-8 servings
  1. 4 cupsChicken broth
  2. 1avocado
  3. 3chicken breasts
  4. 4limes, juiced
  5. 1Jalepeno, thinly sliced
  6. 1onion, chopped
  7. 1/2 cupCilantro, chopped
  8. 3 clovesgarlic
  9. 2 cupsrice, cooked
  10. 1 Tbsporegano
  11. 2 Tbspcumin
  12. 1 Tbspchili powder

Steps

  1. 1

    In skillet, cook chicken, then cube it.

  2. 2

    In large pot, add broth, lime juice, and spices and bring to a boil. Add chicken and cover, let simmer.

  3. 3

    Sauté onion and garlic, add to pot.

  4. 4

    Add Cilantro and Jalepeno right before serving. Serve over rice with avocado and Mozzerella cheese
