Ingredients

10 minutes
6 servings
  • 1large violet colour Brinjal diced
  • 2 table spoons eachUrad dal and chana dal
  • 1 tea spoonCoriander seeds
  • 4-5Red chillies
  • 4 table spoonsOil
  • 1/4 tea spoonAsafoetida powder
  • a pebble sizeTamarind
  • to tasteSalt
  • Mustard seeds and curry leaves for seasoning

Steps

10 minutes
  1. 1

    Remove the stem and slice the brinjal in to small pieces

  2. 2

    Heat 3 tea spoons of oil and roast the dals, coriander seeds and red chillies till the dals become golden brown. Add the asafoetida and transfer the stuff to a plate and allow them to cool down.

  3. 3

    Meanwhile heat the same pan with remaining oil and fry the Brinjal pieces till they become soft and change the colour. Add the tamarind also and fry for another 1 minute and switch off.

  4. 4

    Now add all the roasted stuff and salt in to a blender and grind to chutney.

  5. 5

    Do the seasoning with mustard and curry leaves.
